If you are looking to cheer up your St. Patrick's Day, look no further! This cupcake is inspired by Sugar And Soul. I did my own spin to things! You only need a few things to get this made! You don't even have to make the cupcake from scratch, unless you want to, of course.
  • For the Cupcake, you need Pillsbury Cupcake Mix! They make the new bright colors. I chose green and orange. 
  • Cupcake Liners
  • Gold Sprinkles, 
  • Air Heads Sour Strip Candy
  • Reese's Peanut Butter Cups
  • Powdered Sugar For Frosting
  • 1 Stick of butter
  • 2tbsp milk give or take.
If you want to make the cupcake from scratch, you can use my recipe in this post and add food coloring to make it multicolored. 

How to make the cupcakes:
  • 1 1/3 cups all-purpose flour 
  • 1/4 teaspoon baking soda 
  • 2 teaspoons baking powder 
  • 1/8 teaspoon salt
  • 3 tablespoons butter, softened 
  • 1 1/2 cups white sugar 
  • 2 eggs 
  • 3/4 teaspoon vanilla extract 
  • 1 cup milk
  • 1 jar of pre-made icing or you can make your own
  1. Preheat oven to 350 degrees F (175 degrees C).
  2. Sift together the flour, baking powder, baking soda,  and salt. Set aside. 
  3. Go ahead and place your cupcake liners in a cupcake pan.
  4. In a large bowl, cream together the butter and sugar until light and fluffy. Add the eggs one at a time, beating well with each addition, then stir in the vanilla. 
  5. Add the flour mixture alternately with the milk; beat well. 
  6. Pour in equal amounts in each cupcake liner. Bake for 15 to 17 minutes in the preheated oven, or until a toothpick inserted into the cake comes out clean. 
  7. Place in the freezer to cool faster if you want to decorate now. 
How to make the icing:
  • 5 cups powdered sugar 
  • 4 TBSPs unsalted butter, softened
Use the mixer to mix the icing and add milk as needed to soften.
 For the pots of gold, I used Reese's Peanut Butter Cups and piped icing on top and stuck each one in a bowl of gold sprinkles. This gives it a cute effect!
They look intimidating when it comes to decorating, but they are so easy if you take the time to sit down and do it. You can use an icing bag and tip and pipe icing on the cupcake in any color you want. I chose green. Cut the candy strip in half and stick each side in the icing. I used white icing to make "clouds". It turned out cute! I then sprinkled gold sprinkles on the cupcake and added the pot of gold! I placed them in the fridge to get the icing to get a little harder quicker as well.
 Play and make it your own! There are so many ways to decorate! 
 These will be a hit at any party, that is for sure!
