I am by all means NOT a cake decorator. I stick to cupcakes because they seem easier for me. My daughters party is next weekend and I wanted to make a practice cake to see if I could do it. Little did I know, I did not disappoint myself at all. If I could do it, you can too. This cake is so cute and simple to make! I can't take credit for this recipe because I found the PERFECT recipe over at Kitchen Trials! She has the best recipe for a Bakery Style Vanilla Sponge Cake! I am thrilled with how it turned out! Her recipe yields (2) 8-inch cakes, however, I used (2) 6 inch and had a bit leftover so I just threw it out. I added my gel coloring after mixing, just before I put it in the pan.
Look how CUTE this cake is! Funky and bright. My daughter has a bubbly personality and this just "fits" her. Now, I know that the petal icing (the purple) is supposed to go one way, but I wanted to do it facing each way. I found that tutorial on My Cake School HERE. This takes patience!  I don't think it is bad for my first time. I would like to eventually do a mermaid themed cake and use this technique! 
I hope to get better as time goes, I learned how to fix the peak on the polka dots on the numbers AFTER the fact, so I will use that next time as well. As for the icing, I went an alternative route! This was so easy and I am so glad that I did it. All you do is add butter and milk! It is just the right amount of sweetness! Now for the decorating, I bought a jar of Wilton Decorator icing. 
You need to let this get room temp and you can put in a bowl with gel coloring to color to your liking. I put it in my piping bag and used several different tips and got to decorating! You can find those products linked at the bottom of this post too!
This cake is not dry at all, the texture is amazing and it turned out so perfect! It cut beautifully too! As you can see! I have NEVER had a cake cut like this. It has always just fell apart, so  I was SO HAPPY to have this actually turn out.
I hope that by seeing this, I can inspire you to go out of your comfort zone and try something new! It is trial and error and you will be so proud of yourself!
