The Cuts

Chuck Steak

Chuck comes from shoulders, and it is suitable for any dish sold as braising steak. However, you should know that chuck is tough to eat, if not cooked properly. It is mainly used for adding flavours to casseroles or pies and stews.

Fillet

It is the king of all beef. This beef cut is associated with tasty celebratory dishes because of the high cost. You get Fillet from the lower middle fragment of a cow. This portion of meat is highly beneficial since it is low in the calorie count and fats. Thus, you need not cook Fillet for breaking collagen. It is primarily used to prepare beef Wellington and Chateaubriand.

Brisket

Brisket is a part of the chest area in between the shoulders. In general, you can say it is the working part of the animal. Brisket has the maximum fat presence marbled throughout. It can add the right amount of flavour to your meat dish. It is primarily used to prepare pastrami and corned beef.

Rib-eye steak

Thanks to its beefy flavour, Ribeye is the most popular steak these days. It is present above the cow ribs. You will also find ribbons of fat throughout the meat. This steak adds maximum beef flavour.

Rump

Rump is present at the opposite end of the spectrum. This steak lacks tenderness, but then, it can also make for the best cookable portions when it comes to adding flavour. They are primarily used to prepare skewers or kebabs.
